Marinate in the refrigerator
Combine fish sauce, honey, oil, garlic, shallot, and pepper. Coat chicken and cover. Refrigerate for 1 hour, or up to 8 hours.
Set up two heat zones
Heat one side of the grill to medium-high and leave the other side cooler. Clean and lightly oil the grate. Have a clean plate ready for cooked chicken.
Brown over direct heat
Lift chicken out of the marinade and discard the remaining raw marinade. Grill over direct heat for 4–5 minutes per side, turning with tongs. Move away from flare-ups immediately.
Finish over gentle heat
Move thighs to the cooler zone if needed. Close the lid and cook for another 3–8 minutes, until the thickest part of each piece reaches 165°F / 74°C. Times depend on the grill and thickness.
Rest and slice
Rest on a clean plate for 5 minutes. Slice and serve with rice, cucumber, and lime. Do not pour unused raw marinade over the cooked meat.
